When you need a sando to sink your teeth into and satisfy that craving we all get—this one will slap. Double up if you're serving friends!

Ingredients
1 tin of SCOUT Smoked Wild Pink Salmon
2 cups panko breadcrumbs
1 egg
1/4 cup of chopped fresh herbs (tarragon, basil, parsley, whatever you have)
Shredded iceberg lettuce
2 burger buns
Sliced melty cheese of choice
Optional: sliced pickles
1/2 cup mayo
2 tbsp fresh dill, chopped
1 tsp dill weed
1 tsp garlic powder
1 tsp onion powder
2 Small mixing bowls
Ring mold for forming patties (you can also just use your hands!)

Directions
In a medium mixing bowl, combine smoked salmon, breadcrumbs, fresh herbs and egg
Mix until well combined and form into two large patties (these freeze really well)
Pan fry in neutral oil until crispy on north sides, approx 5 minutes per side
In another small mixing bowl, combine mayo, herbs (fresh & dried), and mix until combined. Set aside until you are ready to assemble.
Assemble by layering on loads of dressing to both sides of the bun, one crispy patty, cheese, shredded lettuce, and pickles (optional, but always welcome)
